Cassia: Also called “regular” cinnamon, this is the most commonly used type.
Ceylon: Known as “true” cinnamon, Ceylon has a lighter and less bitter taste.
Cassia cinnamon is more commonly found in supermarkets, given that it’s much cheaper than Ceylon cinnamon.
While Cassia cinnamon is safe to eat in small to moderate amounts, eating too much may cause health problems because it contains high amounts of a compound called coumarin.

Some sellers are accused of sending customers Cassia in place of the Cylon that they think they are purchasing. What is a SURE way of distinguishing one from the other? Thank you.

The best way to know the difference is to buy sticks, Ceylon will be easy to break in half, where cassia is very hard.

The easiest way to know if it’s Cassia or Ceylon cinnamon is to buy it in sticks and grind it yourself. Cassia will be too hard to grind and hard to break in half by hand. If you try to grind it, it may break your grinder! Ceylon cinnamon is softer and easy to break in half, it’s easier to grind. I’ve been using Ceylon for years now and cannot stand the taste of cassia. When I first started to learn about the difference between them, I specifically ordered Ceylon sticks from a website, it was more expensive than the cassia. When it came, the bag said Ceylon cinnamon. I took a stick out and couldn’t break it in two, I tried to grind it, that was impossible. I complained about it to the company that they sent me the cassia and not Ceylon they did not respond back. So yes, beware, there are websites that will send you the cheaper cassia in the place Ceylon. I did find a reputable website for Ceylon sticks, I’m not affiliated with them, I just found that they are the real deal. And want to share with others.
