DIY Recipe: Raisin and Jaggery Jam
This is a delicious jam made from 2 deeply nourishing key ingredients. Wonderful nourishing raisins and mineral-rich jaggery (unrefined pure cane sugar). It is also super cost effective, and so simple to prepare.
Ingredients
- 1 Cup + 1/2 Cup Hot Water
- 2 Cup of Raisins
- ½ Cup of Jaggery
- 2 – 3 Pieces of Lemon Zest
Step by Step
- Measure out 2 cups of raisins and 1 cup of hot water.
- Add this water to the raisins.
- Measure out ½ cup of jaggery and ½ cup of hot water.
- Add the water to the jaggery.
- Allow everything to rest for at least 1 hour or longer.
- In the meantime, cut a few thin strips of lemon zest.
- Add the zest to your soaking jaggery.
- After 1 hour, or more, get ready to add everything to a pot.
- Add your soaked raisins with the water, and your jaggery mix all into the pot.
- Heat on low, cover, and cook as slowly as possible.
- Check on your pot frequently, stirring about every 5 minutes.
- Cooking until the raisins are soft and falling apart and the liquid has slightly thickened ( takes around 30 minutes). Keep a close eye on the pot all the time so you don’t burn this naturally sugary mix.
- At this point you can bottle your chunky jam as is, you may also choose to blend it if you want a smoother jam.
- Transfer to a clean sealable jar.
- Enjoy this as a delicious and nutritious snack in any way you would use jam. I love it best on bread or crackers.
